Calico Beans

Cooked with bacon and ground beef in a tangy, sweet sauce. They can be made ahead of time and put in a crockpot to take to pitch-ins. Substitute red kidney, butter beans or cannellini beans for your favorites.

Ingredients

  • 1 pound ground chuck
  • ½ pound bacon
  • 1 cup diced onions
  • ¾ cup brown sugar
  • 2 teaspoons dry mustard
  • ½ cup ketchup
  • ½ cup BBQ sauce I use Sweet Baby Rays
  • 3 Tablespoons vinegar
  • 2 – 15 oz cans pork & beans undrained
  • 1 – 15 oz can red kidney beans drained
  • 1 – 15 oz can baby butter beans or cannellini beans drained

  • Cut up the bacon and brown in a large pan. Remove from pan when brown.
  • Cook the ground chuck till most of the pink is gone. Add the onions and cool till they are tender.
  • Drain the grease off and add the bacon, ground chuck and onions back into the pan.
  • Combine all the other ingredients and stir well. Adjust seasonings to taste.
  • Cook on the stove till everything is heated up well.
  • Put in crockpot on low for 4-6 hours.
